Raw chocolate with black garlic
Raw chocolate contains many useful ingredients: antioxidants, various vitamins and minerals. All of these have preserved in this chocolate, as it has been prepared in low temperature. And there is something extra added from the wild Estonian nature – powerful goutweed rich in antioxidants, minerals, flavonoids and fibre.
Estonian Black Garlic matures for weeks at a low temperature and controlled humidity. This process can be compared with sous vide cooking method, where the amino acids react and reduce the sugars giving garlic caramel flavour and brownish colour. With maturation garlic cloves become completely black and gain slightly sweet, syrupy taste which also has some balsamic vinegar and tamarind nuances.
